NO: Corn, Diary, Gluten, Soy or Refine Sugar
This is an easy, tasty, and healthy treat to make that doesn’t last long in our house. I also love to make this when I am craving chocolate and need to sink my teeth into something tasty. I have made it for my friends, co-workers, and have taken it to family gatherings, and the result is always the same that I come home with an empty plate. Ingredients:
2 avocados – ripe, peeled, and pit removed
½ cup creamy peanut butter (gluten-free or substitute with another nut butter, or sunflower seed butter)
3-4 tablespoons cocoa powder
3 tablespoons coconut nectar (or substitute)
½ teaspoon chocolate-flavored liquid stevia (approx. 30 drops)
Optional topping: chopped walnuts, cocoa nibs, or Enjoy Life chocolate chips.
Preparation:
1. In a food processor, mix all the above ingredients together. Blend until smooth and creamy. Optional: add 2 tablespoons coconut oil or unsweetened coconut milk to the mixture for a creamier taste.
2. Take a tablespoon of mixture and place the mixture onto a cookie sheet, press down slightly and form into cookies. Continue this process until all the mixture is used up. Makes approximately 8-10 cookies.
3. Optional: garnish on top of each cookie chopped walnuts and/or dark chocolate.
4. Place cookie sheet in freezer for 2-3 hours until cookies are frozen.
5. Serve as a frozen treat. Put remainder in a container and store in freezer.
